The above is a King Ranch Casserole, a Tex-Mex favorite, typically made of well-seasoned chicken, layers of cheese, and tortillas all in a creamy sauce.
I used black beans instead of a chicken substitute because I thought it would work well -- and it does. It has layers of cheese, beans, tortillas, onions, chilies and sauce. Then to finish it off, it is topped with tortilla chips and baked until it is hot and bubbly.
Really good, partner. Overall, this is a very flavorful, quick and easy casserole to assemble.

I am making the casserole for dinner tonight because I know my kids will love it. Going to add some cumin and corn into the mix as well. Thanks for all your great recipes!!
ReplyDeleteMmm.. corn and cumin sound excellent in this! I do hope you are right and the kids love it :)
DeleteThanks so much for posting!
Made this tonight for dinner and it was super! I used flour tortillas because that's what I had and sprinkled the top with olives because we love them. I read the recipe wrong and was using only a third of the gravy per layer. I figured it out on the 2nd layer so on the top layer I did tortillas, cheese and more gravy topped with olives. The gravy is so good and i'm glad it was on top too. Two omni friends ate with us and they loved it. Totally comfort food! There is one little scrap leftover, and there will be a fight tomorrow to see who gets it. I may have to eat it for breakfast!
ReplyDeleteBecky, thank you so much for letting me know how it went for you. I am so happy you and your friends liked it :)) I love the olives idea - my girls would be thrilled with that addition and the flour tortillas sound great, too.
ReplyDeleteThank you so much for trying it and posting about it!
