healin' noodle soup



RECIPE UPDATE: this soup has been tested and revised and will be featured in the upcoming cookbook "Everyday Vegan Eats," by Zsu Dever.

Tis the season! Flu season! One of my little ones has come down with a bug. When this happens, my first reaction is to make this soup. Other people might reach for the big brand soup in the can, but for us vegans, we tend to insist on something more wholesome than what comes out of such a container, let alone try our damnedest to avoid what goes into it in the first place. 

In fact, over the years, my kids have come to expect this soup when they are feeling under the weather. It takes about 20 minutes to make, including prep time, but it tastes like you've had on the back burner all morning. 

The soup contains about the same simple ingredients as the canned stuff (if you don't include all the unpronounceable ingredients, that is): just carrots, celery, onions, noodles and seasonings.

  2. It's turning out to be a VA weekend... :)
    Great soup indeed. I did find that for our tastes doubling the VA Broth (which btw is awesome and better than any commercial vegan powder out there!) did the trick.
    Yummy soup and it hit the spot on this cold rainy weekend.

  3. Thanks, in2insight! I adjusted the recipe to reflect the amount of broth mix you recommend (I was trying to keep it to a minimum as much as possible - cost issues ;)

    I am so glad you like the broth mix! And the soup. It is pretty overcast weather here, too, so it was nice to have a hot soup. Winter seems to do that to me - here in Chicagoland, wanting more soups. Didn't happen so much when I was in California, though.

    3. Actually, I would post it! I am, however, bound by contract that whatever is published in the book cannot be published on the web without the permission of the publisher. It is now copy-written and I would be breaching my contract if I published it. I will be allowed to publish a few recipes from the book (at the discretion of the publisher), perhaps this will be one!
