jamaican veggie purses

Jamaican food is African inspired, so it is appropriate for our Tuesday Night meal. This one comes out of Vegan Soul Kitchen by Bryant Terry. I picked up this book when Vegan.com spread the word that it was on sale for $8. This  has to be one of the better cookbooks out there. I've had great success with many of his recipes, and this one is no exception.

He uses coconut butter in the crust and coconut milk in the recipe. There are fresh cut corn, fresh shelled peas (CSA), carrots and shredded cabbage. The salad is cucumbers and tomatoes in a dressing of lime, lemon and orange juices, from the same book.

Excellent meal, although Cat does not like coconut milk - tastes too odd. The other two gobbled it up.

We have a bunch of blueberries and since blueberry season is almost over, and since GiGi at Veganville blogspot has a recipe for said blueberries and coconut milk, it was destiny.

    I have Vegan Soul Kitchen. I made a coconut pie crust from there a couple of weeks ago.So good. I have to give these scrumpious looking purses a whirl sometime next week. I need a new purse. I'll let you know how they come out.

  2. Cat things a lot of things are weird...like the entire plant kingdom except for potatoes, tomatoes, wheat and soybeans.

    The dessert was really great and it went really well with the dinner theme. Thanks, GiGi! :) We don't own parfait glasses or any long stemware, though; we have kids.

    If you don't need a purse, you can make a pocket, instead. I made hand pies a week or so ago and didn't want to seem repetitious.

    I'm so sad blueberry season is over, altho I think the kids are getting sick of them since this last bin is sitting in the fridge still.

    I know what you mean about the berries...I still have two clams in the fridge myself. Maybe I will freeze them and turn them into Green Smoothies (Which are smoothies with fruit and spinach. The kids don't care it is healthy as long as it is not in a clear glass through which they can see that it is actually the color green. About 2 c frozen fruit, and 6-8 c spinach. I also put some spirulina and other green goodies in there.)

  6. The gist of the recipe:

    Sautee onions and garlic in coconut oil.

    Add carrots, potatoes, cabbage and 3/4 c of coconut milk (or enough to make a nice, thick sauce once reduced).

    Cook until veggies are tender.

    The pastry is made using 2 t turmeric and the fat to use is coconut butter (I used coconut oil and Earth Balance). Treat it as a regular pie crust.
