enchiladas

It was Mikel's day to cook and he made enchiladas. It seems he is very fond of Mexican food! He did a kick-butt job! He cooked the beans and onion and some chilies. He added some Daiya and Follow Your Heart, made some chili sauce and baked it like a casserole.


I made some wonderful greens with yellow squash, fennel and grape tomatoes to accompany the dish.

    It is so important that the kids know how to cook before they leave the house; otherwise they'll be stuck like their mother was, eating boxed mashed potatoes and Total cereal in their college years.

  3. Exactly! I wish my mom was like you. I would say she only knows about 10 recipes and used to repeat cooking them over and over. She's blown away by my cooking ability now, considering I taught myself. I used to eat a lot of fast food and ramen before this whole veg thing. Learning how to cook for yourself, and cook healthy, is very important. I hope he appreciates what you are trying to teach him : ]

  4. I am very impressed with your cooking abilities, although I don't know how long you've been at! You have some of the most mouth-watering pics on the web and I love sneaking a peak at your site.

    I think they all appreciate it on some level; after all, when they have to cook - each once a week - they get to make what they want, as long as it follows certain guidelines.

  5. I've been cooking for two years now..one year as a meat eater and the past year as a vegetarian. The power of the internet really does help a lot or I would for sure be lost. Thank you for the nice commpliment.
    If they don't appreciate it now, they will for sure when they move out on their own. It sounds like something really fun to do each week. Again wishing I had something like this growing up.
